
Ingredients
- 1 cup butternut squash
- 1 medium head of cauliflower, chopped into small florets
- 1 medium yellow onion
- ¼ cup olive oil
- 2 tsp turmeric
- 1½ tsp cumin
- 1 tsp dried rosemary
- 1 tsp salt
- 4 cups bone broth
- 1 can coconut milk, full fat
- 1 pinch ground black pepper
- Fresh herbs, chopped
- Black pepper
- Olive oil drizzle
Methods
Preheat the oven: Set your oven to 400°F (200°C).
Prepare the vegetables: Cut all the vegetables into uniformly sized pieces to ensure they roast evenly. Place them into a large mixing bowl.
Season: Combine the vegetables with olive oil, turmeric, cumin, dried rosemary, and salt. It is advisable to use tongs for mixing to prevent turmeric from staining your hands.
Roast: Spread the seasoned vegetables onto a baking sheet and roast for approximately 25 to 30 minutes, turning them halfway through.
Cool: Remove the baking sheet from the oven once the vegetables are tender and allow them to cool briefly.
Make the soup base: Transfer the roasted vegetables to a large soup pot. Pour in the bone broth and coconut milk.
Simmer: Bring the mixture to a light boil, then cover, reduce the heat, and simmer gently for around 25 minutes.
Blend: Turn off the heat. Carefully blend the soup (in small batches) until smooth but with a slight texture. An immersion blender may also be used.
Finish: Pour the puréed soup back into the pot. Taste and adjust the seasoning with more salt and pepper if needed.
Serve: Garnish as desired, serve immediately, and enjoy!
